Becky has been struggling with some chronic illness… but she was feeling better today so she made white chocolate pilinut cookies.
Some of you don’t know what pilinut is. This is a nut that comes from the pili tree (I can’t help but think that is something many of you guessed). This large tree is especially common in the Bicol region of Luzon. I was in Bicol some years ago when the pilifruit was ripe. Pilifruit is an uninspiring fruit. It is not sweet. It is boiled and then people eat the fruit in a soy sauce based dip. What is left is a long put or stone that has the nut meat inside.
For the cookies we got a bag of shelled but raw pilinuts. We blanched the nuts in boiling water to get the brown “paper” that covers each but. Then we put the nuts on a baking pan and roasted them in the oven at 425 deg F for a few minutes until a light golden brown.
Becky took a white chocolate macadamia nut recipe and substituted pilinut. It worked great.
